Low(er) fat Mac n' Cheese for One

1 cup Pappardelle's Garlic and Basil Shells3 wedges Garlic and Herb Laughing Cow Cheese1 TBS Oil3/8 cup Milk1 TBS Sun Dried Tomato, choppedPepper, to taste
Boil water and cook pasta shells as instructed or until desired texture is reached.
Meanwhile, heat a non-stick skillet on medium low with 1 tsp oil. Add the 3 wedges of cheese, the chopped sun dried tomato, the milk, and pepper to taste. Stirring occasionally to expedite the melting process and ensure nothing burns. You may also cover to help expedite the melting in between stirs.
Once the pasta is finished and the cheese has melted, pour the pasta into the skillet and coat with cheese. Serve.
