Great Gazpacho

Ingredients
1 can 28 oz crushed or diced tomatoes, undrained. 1 cup tomato juice1 cup chopped red or orange bell pepper1 cup chopped unpeeled cucumber1/4 cup finely chopped red onion2 green onions finely chopped1 bunch cilantro leaves, chopped3 TBS red wine or apple cider vinegar3 TBS olive oil2 dashes or to taste hot red pepper sauce2 cloves garlic mincedsalt and peppermay garnish with parsley and diced avacado
Directions
Place all ingredients except salt, pepper and garnishes in a large bowl and combine. Coarsely puree about half the mixture in blender or food processor and return to the bowl, stir well. Season to taste. Refrigerate for at least 2 hours.

    Very good--but then I love gazpacho. I added V8 juice to make it a little thinner and fresh tomatoes and basil--just because. Next time I think I will add a little worcestershire sauce and a few more spices to kick up the flavor a little. - 8/8/11

    I made this but left out the olive oil and added a stalk of celery. It was refreshing on a hot evening. Mine came out thick so needed more tomato juice or water. Very good. - 6/22/10

    I make this recipe all the time from the Dr. Oz book. I think your calculations may be a little off. I noticed the amount of bell pepper and olive oil varies from the recipe and the calculations list. The recipe should have more fat due to the oil, although healthy fat. I eat this as a dip (salsa) - 3/21/09
