Coconut Carob Pancakes

Ingredients
1/4 c. each of: ground flax seed, coconut, oatmeal1/2 c. Hemp protein powder3 Tbsp. carob powder2 egg whites2.5 c. tap water1 medium banana, mashed1 c. chickpea flour1 tsp. each of ground cinnamon and vanilla extract
Directions
Combine all ingredients in a bowl and mix until smooth.

Pour 1/4 c. portions of mixture into a skillet; cook over medium-low heat 3-4 minutes or until bubbles start to form on the top of the pancake

Flip and cook 2-3 more minutes.

Serving Size: Makes 15, 2" pancakes
