Potatoes and Ham Au Gratin

Ingredients
2 cups extra-lean diced ham4 med potatoes, diced1/2 white onion, chopped1/2 medium red bell pepper, chopped (optional)1 cup skim milk1.5 cups low sodium chicken broth3 tbsp. whole wheat flour3/4 cup shredded 2% cheddar cheese2 tbsp. bread crumbs
Directions
Preheat oven to 400 degrees.
In 2.5 qt casserole add, diced potatoes and ham.
Saute onion and bell pepper in nonstick skillet until tender. Add a small amount of chicken broth and flour to make a roux. Slowly add rest of chicken broth and milk. Stir until it starts to thicken. Remove from heat. Pour over potatoes and ham. Top with cheese and bread crumbs. Bake in 400 degree oven for 35 minutes or until potatoes are cooked through. (depends on size of "diced" everyone is different.)

    I found the end result to be a bit watery. Very tasty though. I think I will tweek it next time so it is a bit thicker. The potatoes weren't quite cooked through, so I think they may need precooking. - 1/8/10

    I made this for me and my mom last night, I just cut the recipe in half of course. I had one portion and so did she and then another one, and then the last one. So she ate 3/4 fourths of it. Haha. It's good, definately worth it. Left out the breadcrumbs. And I used slices of ham instead of chunks. - 8/17/09

    My family loved this recipe. I used slightly more milk and just water instead of broth. I did not use bread crumbs. I sauted my onion with some sweet corn. I added a sprinkle of salt to the roux, but this was not needed. It was plenty salty enough. Took longer to cook through. - 2/13/10

    This was DELICIOUS! I made it exactly as written and wouldn't change a thing, except that I put is in a 2.5 Qt baking dish that was taller than what is pictured and the potatoes didn't get done in 35 minutes. Next time I'll cook it longer. I'm thinking at least 50 mins. - 4/22/21

    Great! Very filling and satisfying. I made a couple of changes, using Jennie-O Turkey Ham, omitting the bread crumbs, and I just dumped everything into a bowl and stirred before transferring to a sprayed casserole dish. Baked 50 min at 375. Worked great! - 6/24/20

    Calorie count is off. Way too low. Needs recalculating. No serving size given. You have to have fat to make a roux. What is used to saute the onion and pepper? What is the roux base? I used whole milk and white flour and still watery... too much liquid, cook time longer than indicated. Add spices. - 1/4/20
