Eat Clean Breakfast Burritos

Ingredients
2 cups egg whites1/2 c 1% cottage cheese1/2 c chopped tomato1/2 c chopped onion1/2 cup black beans4 whole wheat tortillassea salt and gresh black pepper1/4 tsp red pepper flakes
Directions
in a small bowl whisk egg whites, cottage cheese, salt, pepper and red pepper flakes
In a medium skillet coated with cooking spray, saute vegetables and beans until soft. Pour the egg/cottage cheese mixture over vegetables and cook until mixture sets. Once firm, divide egg mixture among the warmed tortillas. Roll each into a burrito. Garnish with low-fat-sodium salsa

    The cottage cheese took the place of both the mexican cheese blend and the sour cream I normally use in burritos. I substituted with garbanzo beans and brown rice tortillas. This recipe would be good to take to school/work if you take the salsa separately in a tiny jar to add later. Very yummy! - 11/13/10
