Bean, Corn & Avocado Salad

Ingredients
* Beans, black, , 1 can * Yellow Sweet Corn, Canned, 1 can * Red Ripe Tomatoes, 1 medium * Onions, raw, .5 cup, chopped * Avocados, Florida, 1 fruit * Lime Juice, 2 fl oz * Olive Oil, 1 1tsp * Cilantro, raw, 4 tbsp
Directions
Drain beans and corn, mix. Add finely chopped onion, chunky tomato and cubes of avocado. Season with lime juice, olive oil and fresh cilantro finely chopped. Mix well, salt and pepper to taste.

    Fantastic dish. I have made this twice now. I doubled the avocado the second time around. It still came out well. I use fresh corn that I cook in the microwave, let cool, then cut off the cob. I also used Trader Joe's Black Beans because they're not packed in corn syrup like many other brands! - 8/28/12

    We loved it. Made exactly as instructed but I'm already thinking about fun variations for this recipe. My only complaint is the prep time is misleading -- took at least 20 minutes to chop all that stuff up. I am forwarding the recipe to my relatives to share! - 7/18/10

    It was a great basic but bland. I added chopped garlic, added cumin, chili powder, balsamic and cayenne pepper...and WHOA was it great with corn chips! I will try that on a Boca or with some chips and grilled chicken. Thank you, CREATIVELIZA! I will make this again and again. - 4/24/11

    Very Good. I added finely chopped green pepper, garlic salt and only 1.5oz of lime juice. I put it on some tortilla chips and it was a suprisingly filling meal! Next time, I think I will grill a couple of chicken breasts, use this as a side with chips, and it will be a great meal for my family. - 6/8/08

    I made a few changes. I used lemon instead of lime juice and I added hot banana peppers, chopped to give it more kick. I didn't have any cilantro but it turned out very good. Thanks. I will eat this again. - 9/30/13

    Wonderful!! I made a few changes. i am not a cilantro type person so that was omitted. I also don't like fresh onions, but don't mind the dehydrated kind so I used some of that. No limes in the house so added lemon juice and then I added Mrs. Dash. Superb. great in a tortilla or as a side dish. - 1/29/13

    Good but improved it by adding 1/2 red pepper- chopped, more tomatoes, a 2nd avocado, cumin for flavoring and 1/2 C cooked quinoa for more protein. I also substituted Mexican corn vs. regular and used low sodium black beans. Not only drained but also rinsed beans and corn. - 2/1/15

    I make this, but I found if you grill your corn (take off husk, and put in foil, right on the girll for 10 minutes turning) then cut the corn, it really adds more flavor to this recipe. I get more compliments on it!! Also a tsp of honey! - 8/25/13

    I make this without avacado and cilantro, but add a variety of beans, Kidney beand, Great Northern , limas whatever, plus add peppers and use Balsamic vinegar in place of lime juice - 1/11/13
