WhichHat's Couscous, Olive and Tuna Salad

Ingredients

1/3 cup couscous, unprepared1/2 cup boiling water1 large can large, pitted, black olives, cut in halves3 cans (5-oz each) tuna in water, drained1/3 cup sliced almonds2 cups cottage cheese
1. In a medium-sized bowl, mix the couscous and water. Cover with a dessert plate and let sit for 5 minutes (or per the directions on the box).
2. Meanwhile, in a 2-quart casserole dish with lid (or similar sized dish with lid) add the halved olives, tuna, almonds, and cottage cheese. Stir well. At this point, you may want to do a taste test and add seasoning to your taste. I tend to prefer a subtler, blander flavor than most people.
3. After couscous is done, stir into the tuna and cottage cheese mixture.
4. Serve on toast, bread, bed of spinach, etc.
NOTE: Nutritional information does not include bread, toast, etc. that may be served with the salad.
