Vegan Vanilla Loaf Cake

1/3 cup canola oil2/3 cup low-fat, vanilla soy milk1 tbsp vanilla2 tsp white wine vinegar1 cup spelt flour1/2 cup sugar2/3 tsp baking soda1/4 tsp salt
Preheat the oven to 350F, grease a loaf pan.
Beat together the oil, soy milk, vanilla and vinegar.
Add the flour, sugar, baking soda and salt, beat smooth.
Bake 35 minutes, until cake begins to pull away from the sides of the pan and a tester comes out clean.
Serving Size: Makes 1 loaf, 10 slices
