Quick Lasagna

8 pieces Barilla lasagna flat pasta1 pound ground beef1 15 oz bottle of tomato sauce1 15 oz container part skim ricotta cheese1 c fat free or skim mozzarella cheese.25 c Parmesan cheeseminced garlic, to taste.25 c diced onion or peppers (or both)
Brown the ground beef or turkey in a pan. Add garlic, onion and/or peppers to the meat. Remove from heat when finished, let cool a bit.
In a medium bowl, add the ricotta cheese, 1/2 c of the mozzarella cheese and more garlic if you want. Add the cooled ground beef/turkey, etc.
In a 8x8 pan (I use glass), spread a .25 cup of sauce on the bottom. Layer two Barilla lasagna pastas on the bottom. Layer 1/3 of the meat mixture on the lasagna pasta, spread it around. Scatter some of the mozzarella cheese on top, then spread ~1/2 c of the tomato sauce on top. Repeat two more times.
Cover the lasagna with foil. Put into preheated oven set at 350F for 30 minutes. At 30 minutes, take out, remove the foil, add Parmesan cheese to the top, put back in oven until the Parmesan melts on the top.
Remove from oven, let it settle for about 10 minutes. Then dig in!
Serving Size: Either 4 4x4" pieces, or 8 2x4" pieces (out of 8x8 pan)
