2 T olive oil2 C onions, chopped1 C carrots, chopped1 C mushrooms, minced6-10 cloves garlic, minced1 lb. ground beef1 bay leaf¼ C fresh parsley, chopped3 T fresh rosemary, chopped3 T fresh basil, chopped2 T fresh oregano, chopped2 T fresh thyme, chopped3 C tomatoes, cored and chopped2 6-oz. cans tomato pastesalt & pepper, TT
1. Heat olive oil in a large pot over medium-high heat. Add onions, carrots, mushrooms, and garlic and heat until fragrant. Add ground beef and herbs, and sauté until the beef is cooked. The vegetables will not be done cooking.
2. Add tomatoes, tomato paste, 4 tomato paste cans full of water, salt, and pepper. Cover, turn heat to low, and simmer for 2-6 hours.
3. Serve over pasta.
