Pie crust, spinach, eggs, buttermilk, feta, bacon, onion.
Preheat oven to 375. prepare your pie crust. Thaw spinach and squeeze very dry. Scatter around pie crust. Crumble feta and scatter as well. Slice onion and bacon, sautée until cooked thru and caramelized. Drain. Scatter around pie crust. Meanwhile, beat eggs, buttermilk, milk, nutmeg and Tabasco. Season with salt and pepper as desired.
Pour gently over spinach mixture. Gently shake the pie plate to settle and remove bubbles. Bake in the center of the over for 35-40 minutes, until center is just set and a knife comes out clean. Remove from the oven and allow to cool for 20 minutes.
Great served cold, or warm. Served with a green salad, makes a great high protein dinner that is cheap, fast and easy!
