Beth and Virginia's Veggie Mexican Dump

Ingredients
* Canned Tomatoes, 1 can (remove) * Cilantro, raw, 5 tbsp (remove) * Carrots, raw, 1 cup, chopped (remove) * Yellow Sweet Corn, Frozen, 1 cup kernels (remove) * *Goya Black Beans, 1.25 cup (remove)
Directions
Saute tomatoes and carrots in a big skillet, covered, stirring occassionally until carrots soften. Add the rest of the ingredients and heat through. add seasonings as desired. Serve on tortillas with guacemole, sour cream and/or cheese.

The filling alone, at five servings, is ONE weight watchers point.
