Mediterranean Brown Rice w/ Sun Dried Tomatoes

Ingredients
1 package of Trader Joes Organic Brown Rice1 tsp olive oil3 cloves garlic1 shallot (yellow onion)1 tbsp pine nuts2 tbsp basil2 tbsp finely chopped basil1 tbsp parmesan cheeseSalt and pepper (optional)
Directions
In a separate pan heat olive oil on medium low heat. Add garlic and shallots cook for 3 minutes. Add sun dried tomatoes and pine nuts. Cook for 2 minutes. Add brown rice to pan and mix. Remove from heat and add mix in chopped basil. Sprinkle with parmesan cheese, salt and pepper.

Makes three 1.25 cup servings

    Just a few questions. How much sun dried tomatoes are to be used. In case I want to use other brown rice, what is the package size of TJ's rice. And can I assume that the rice has been cooked? - 7/13/08
