Sweet Potato Crusted Salmon Quiche

Ingredients
1.5 c sweet potato grated 1 egg 1 T whole wheat flour 3 eggs4 egg whites1/2 cup chobani4 oz smoked salmon - shredded3 oz blue cheese1/2 onion garlic
Directions
grate sweet potatoes, mix with 1 egg & 1T whole wheat flour. Spray 12 cup muffin pan and fill with mixture. Push mixture into cups to create a 'bowl'. Bake at 425 for 25 minutes. Pull out and let cool 10 minutes.

Saute onion & garlic.

Mix 3 eggs, 4 egg whites, 1/2 c chobani. Mix until all together. Fold in sauted onions, garlic, salmon & blue cheese.

Pour egg mixture into sweet potato cups and bake at 350 for 20 minutes or until cooked through.

Serving Size: makes 24 single serving quiche
