Slow Cooker Italian Chicken-Lentil Soup

2 c. carrots, chopped1 c. zucchini, chopped1 onion, chopped (1/2 cup)1 cup dried lentils sorted, rinsed4 c. low sodium chicken broth1/2 tsp. garlic salt1 tsp. black pepper1 lb. boneless, skinless chicken thighs1 can (28 oz.) diced tomatoes, no salt added1 c. mushrooms, chopped1/4 c. basil, chopped fresh
1. Spray cooker w/cooking spray. In slow cooker, mix carrots, zucchini, onion, and lentils, broth, garlic salt and pepper. Top with chicken.
2. Cover. Cook on low 5 to 6 hours.
3. Remove chicken to from slow cooker to plate; shred, using 2 forks. Return to slow cooker. Stir in tomatoes, basil, and mushrooms.
