Creamy Chicken and Rice Bake

Ingredients
1 package frozen mixed vegetables 1 pound boneless, skinless chicken breast, chopped into bite-size pieces 1 tablespoon no-salt seasoning blend black pepper to taste1/4 cup light cream cheese 2 tablespoons chicken broth2 cups cooked brown rice1/4 cup whole-wheat breadcrumbs
Directions
Preheat the oven to 375 degrees Fahrenheit.
Prepare the mixed vegetables according to package directions, then drain any excess water.
Meanwhile, preheat a medium skillet over medium-high, then coat with cooking spray.
Add the chicken to the pan, season with the no-salt seasoning blend and black pepper, and cook until no longer pink, about 10 minutes.
Remove from heat, then stir in the vegetables, cream cheese, broth, and rice.
Transfer to a greased 8x8" baking dish and top with the breadcrumbs. Bake 15 minutes, until the breadcrumbs are golden brown.
Portion size: About 1 cup

    Those who think this a "lot of calories" are perhaps forgetting this would be your main dish. Your main dish would have more calories and bulk than say your fruit or vegetables; which if you are on Weight Watchers are considered as free or 0 points. What do you want?     Delish! And for you who are condemning the carbs - remember the brown rice and WHOLE WHEAT bread crumbs are the good carbs. Full of the energy you need, keeps you fuller longer and should get several servings per day. Calories are minimum - 360 for a MEAL, remember, not a side dish! - 1/23/13

    Can lower the carbs by grating a head of cauliflower and this veggie version of rice can easily be confused with rice and better source of antioxidants, vitamin c, iron & potassium - 1/23/13

    I skipped the bread crumbs. Used more broth. Cut the rice down. It has lots of protein. I used regular carrots and frozen peas. Added mushrooms. No bread, less rice reduced the carbs. It was very good. Might try with salmon. - 1/23/13

    I don't like package rice. I grew up in Hawaii, and the first kitchen experience I and most of my peers had was cooking rice. I made this with leftover cooked brown rice, and I used Sam's club Canned Chicken Breast in water. It was very fast and very tasty. - 2/5/13

    This sounds OK but looks extremely dry! If I make this I will use have the rice and add more broth and skip the bread crumbs completely. Looks like alot of calories too and not much nuitrution. - 1/23/13

    This sounds okay...it needs adjustments though. Like white rice because brown is repulsive. Definitely add in some broccoli and cauliflower. And YUM panko bread crumbs on the top! Carbs are your friend!! - 1/9/15

    FYI: Your picture looks like it was made with white rice. I plan to make this casserole, except I will cook my brown rice first. I don't like "instant" rice, the texture is off somehow.
