Slow Cooker Beef and Beet Borscht

Ingredients
1.5 lbs stew beef4 beets, chopped2 carrots, chopped2 celery stalks chopped1 parsnip, chopped2 red onions, chopped1 cup cabbage, chopped14 oz diced tomatoes6 cups beef brothsaltpepper2 bay leaves2 cloves garlic
Directions
Preheat oven to 450
Add beef and chopped veggies to 2 lrg baking pans.
Bake for 15 mins then stir and rotate in oven.
Cook for another 10 mins in oven.
Add to slow cooker and top with other ingredients.
Cook 4-5 hrs on high or 6-8 on low.
Top with parsley and sour cream

    Yummy beefy flavor and lots of fiber. I ran it through the blender. This recipe should probably be halved for a 3-quart slow cooker; I couldn't get all the broth in. - 1/24/16
