Yellow Split Peas soup

Ingredients
2 ham hocks or shanks, raw1 bag yellow split peas, rinsed1 onion, chopped1 potatoe, chopped1 tsp.Seasoning salt1 tsp. Pepper1 tsp. Garlic powder
Directions
Fill a stock pot with 6-8 cups water depending if you like a thicker or thinner soup. Rinse split peas and sort out odd pieces. Add full ham hocks or shanks, peas, onion, and seasonings to the water. Bring to a low boil and then let simmer for about an hour. The potatoes will add thickness and texture. If you would like a thick soup add the potatoes right away. If you would like a thinner soup and small pieces left in the soup add after an hour. Soup is done when peas are no longer formed and potatoes are soft. This should serve 6-8 people.

    I make this the same way except I add water to the top of the pot and let simmer until it is reduced. Also, only cut the onion in half and throw in the pot with the peel on. It really adds taste and colour! - 11/22/13
