Eggplant, choppedZuchini, choppedBlack Beans, drainedBell Pepper, choppedOnion, choppedGarlic, mincedTomato, choppedHerbs Olive Oil
1) Use 2-3 Tbls of olive oil to saute onions, garlic, and zucchini.
2) Precook the eggplant in the microwave (otherwise it would soak up tons of olive oil) adding it afte the other vegatables are cooked.
3) Add the tomato and beans.
