Rachel Mac's Blue Cheese Turkey Burgers

Ingredients
40 oz ground turkey (two 20-oz packets or 2.5 lbs from the butcher's counter)1 whole egg2 egg whites3 oz blue cheese crumbles1 c. quick oats1 red onion2 jalapeños3 cloves garlic, mincedSalt, pepper, red pepper flakes, cayenne (if you want it spicy!)
Directions
Dice the red onion and jalapeño (watch your cuticles and eyes! I wear latex gloves) and sauté them in a skillet or nonstick pan until the onions are translucent.

Combine all remaining ingredients in a bowl and mix with your hands. Cause YAY! Hands are the best utensils ;) Preheat the oven to 400* but not while you have raw poultry slime on your hands!

Fill 15 muffin tins with turkey burger mix (if you only have a 12-tin muffin thingy, cook 3 in a nonstick ;) Cook them at 400* for about 40 minutes.

To reheat, pop one of your burger muffin thingies in the oven (cut it in half and drape a barely-damp paper towel over it) for one minute, turning once in the middle. ENJOY! :)
