Roxanne Marie's Seafood chowder

Ingredients
1 small yellow onion chopped1 cup of diced celery2 tbsp of olive oil4 red potatoes,peeled and diced1L stock,,chicken,veg or fish1 can cream corn1 can 2% evaporated milk1 can clams2 cups baby scallops raw2 cups crab meat1 tilapia fillet chunked upsea saltfresh ground black pepper1 tbsp dry basil
Directions
1. Sauté onion,celery in olive oil until tender
2.Add potatoes and cover with stock.Cook until just turning tender.
3.Add the rest of the ingredients and simmer for 20-30 minutes until all seafood is cooked.
4.Season to taste with salt and pepper.

Serving Size: makes 8 1 -cup servings
