2 potatoes, peeled and cubed1 carrot, diced1/2 cup green beans, chopped1/2 cup frozen pea1 cup canned garbanzo beans, drained and rinsed1 onion, finely chopped2-3 tomatoes, peeled and chopped1 tsp salt1 tbls vegetable oil1/2 tsp ground turmeric1 tsp mustard seed1 tsp ground cumin1 tsp garam masala1/2 tsp ground ginger1/2 tsp garlic powder1 tsp chili powder
1-In a microwave safe dish, place the potatoes, carrots, green beans, salt and turmeric. Cook for 5 minutes. Add the peas and cook for an additional 3 minutes.
2- Heat oil in a large skillet over medium to medium low heat. Heat mustard seeds and cumin. When seeds start to pop, add the onion and saute until transparent. Stir in tomatoes, garam masala, ginger, garlic, and chili powder. Saute 3 minutes.
3- Add cooked vegetables to the tomato mixture and saute for 1 minute.
*Note: Water or vegetable broth can be added at the end of the cooking process to make this dish more like a sauce that can be served over rice.
