Caribbean Black Bean Soup

Ingredients
1 T olive oil2 cups red onion1 green pepper chopped1 red pepper chopped2 finely chopped jalepenos (with or without seeds)1 garlic HEAD.25 cup tomato paste4 cups vegetable broth1 t. thyme1 t. cumin.5 t . ginger.5 t. allspice.25 t. cayenne pepper.125 t. salt2 15 ounce cans black beans, drained and rinsed.5 cup coconut milklime (optional)cilantro (optional)
Directions
Saute onions, peppers, and garlic in olive oil for approx. 5 minutes. Mix tomato paste in 1 cup veg. broth and add to vegetables. Add vegetables, beans and spices to crock pot and cook for 8 hours on low. Add coconut milk at end and serve.
