Ingredients
1/8 cup virgin olive oil1 clove garlic1 tbsp cumin1 lime, juiced16 oz sweet corn16 oz can black beans16 oz can black-eyed peas16 oz can hominy1 bunch green onions-chopped1 bunch cilantro-chopped1 avocado-chopped1 tomato-chopped
Directions
1. Combine first four ingredients, whisk in small bowl
2. Mix everything else in large bowl
3. Pour dressing over mixture and mix together
4. Chill for two hours
5. Mix and serve with tortilla chips
