Mediterranean Salmon Wrap

Ingredients
2-5zo cans of skinless, boneless salmon drained well1/4c chopped fresh parsley1/4c chopped pitted Kalamata olives1/4c chopped red onion2T extra virgin olive oil1/2t finely shredded lemon peel2T fresh lemon juice12 leaves romaine lettuce, thick ribs removed4 Mulit grain/flax flat breads1/2c bottled roasted red sweep peppers, sliced1 lg. ripe tomato, halved & sliced
Directions
1. In med. bowl, combine salmon, parsley, olives, onion, oil, lemon peel, & lemon juice. Season with salt & pepper.
2. to make each sandwich: place 3 lettuce leaves on a flatbread. Top each with 1/4 of the salmon salad, top with a few red pepper slices & tomato slices. Fold & roll.
