Parsnip Leek Soup - low sodium

Ingredients
4 leeks2 medium parsnips1 apple1 medium/small potato1 cup low sodium broth4 cups water
Directions
Clean leeks, put greens in a largish pot
Peel parsnips, put peels and trimmings in the pot
Peel potato, put peels and trimmings in the pot
Add the water to the pot, bring to a boil, cover and simmer for 20 minutes.

While the stock simmers chop leek greens and other vegetables, put in a pot with the stock.

Strain the stock and add enough to the vegetables to cover.

Bring to a boil, and simmer for 1/2 hour.

Puree.

Serving Size: makes 5, 2 cup servings
