Egg Potato Chicken Skillet

1 lb ground chicken extra lean3 medium potatoes4 large eggs2 tbsp canola oil1/3 cup skim milk2-3 cloves garliccooking spraysalt and pepper to taste
- Preheat skillet with canola oil.
- while preheating, cube potato into bite sized pieces
- add to oil and cook until golden brown.
- while cooking potatoes, in another fry pan cook the ground chicken until fully cooked. Add to potatoes
- combine milk and eggs and cook in separate pan sprayed with cooking spray until just cooked (a bit wet is still ok).
- mix in with potato and chicken.
- season to taste and serve
Serving Size: makes 2 adult and 2 kids sized servings
