Ingredients
2 lb. boneless stew meat cut into 1/2 " cubes2 medium onions, cut into eighths4 medium carrots, cut in half crosswise and lengthwise2 stalks celery, cut into diagonal pieces1 cup tomato juice1/4 c. quick cooking tapioca1 T. sugar1/4 tsp. salt1/4 tsp. pepper2 medium potatoes, cut into 1/4 " thick pieces
Directions
Preheat oven to 300 degrees. Cut vegetables and meat as directed. Combine all ingredients, except potatoes, in large casserole dish. Cover & cook for 2 1/2 hours. Add potatoes and cook for 30 minutes longer. Stir occasionally. Makes 8 1-cup servings.
