Breakfast Lentils

Ingredients
1 cup red lentils (soaked for about four hours)3 cups of red rooibos tea (yep, tea! we had leftovers and I thought I’d be creative)2 apples, diced1 tbsp cinnamon1 tsp clove 1 tsp turmeric (optional, but highly recommended)Maple syrupVanilla-flavored coconut milk beverage (not canned)
Directions
Bring the lentils and the tea to a low boil and then reduce heat to low to medium.

After about ten minutes, add in diced apple and spices. Stir and then cook for 25-30 minutes, until the lentils are mushy.

Serve in small bowls, and drizzle of maple syrup and a generous splash of coconut milk

    I just made this. I used Celestial Seasonings Cinnamon apple spice tea. The flavor of the tea tricks my mind into thinking the dish is sweeter. I reduced the cinnamon to 1 tsp & the cloves to 1/2 tsp. I think it's sweet enough w/the apples & didn't use the syrup, 1% milk, & for me,this is a dessert - 4/16/13

    The proportions of spices in this are way off for this recipe. Way too much clove (Made my tongue numb) Too much cinnamon. Next time I make it I will cut way back! - 4/8/13

    I didn't have apples but I had an open can of Pears in pear juice. I used the pear juice plus earl grey tea , added 1/2 cup of frozen cranberries and 1 tsp fresh grated ginger. Instead of coconut milk or milk I added unsweetened fat free yogurt. YUMMY! - 4/19/13

    This is absolutely delicious!! I threw a Ginger Peach tea bag in the pot when I cooked them. I used 1/2 the amount of cloves. I didn't use the syrup at all - doesn't need it! Tastes like apple pie without the crust! Yum Yum! Make this - you won't regret it. - 2/5/14

    I made this last night and loved the texture with coconut milk over it.. but the spices were a bit too much; I would reduce the spices by half and let the earthy lentils stand out a bit more. - 2/3/14

    Without maple syrup, it is not sweet. Adding extra cinnamon gave me the slight sweetness I needed for breakfast. It will be good as a compliment to lunch and dinner meals. - 4/3/13

    I haven't tried it yet, but plan to. If you serve it with brown rice, you start your day with a complete protein (as well as additional fiber). - 1/30/14

    I used Chi tea, but that was a mistake; the dish turned out bitter. I tried cooking overnight in a slow cooker. That didn't work either; the lentils were still hard in the morning and I had to cook on the stove to soften. Even with ignoring the bitterness from the tea, I didn't like this dish. - 4/19/13
