Spicy Carrot Soup with Ginger and Apples

Ingredients
8 c. chicken stock1 T. EVOO2 lbs carrots, chopped2 c. chopped onions2 chopped apples1/2 c. grated ginger 3 minced garlic cloves8 oz 1% Fage yogurt2 T. reduced fat sour cream1 t. cumin1/8 t. nutmeg1/8 t. cayenne pepperjuice of 1 lemonS&P to taste
Directions
Saute onions and ginger in olive oil, then add garlic. When the garlic becomes fragrant, add chicken stock, carrots and apples. Bring to boil and simmer til tender, approx. 30 minutes. Off heat, puree with immersion blender. Add the rest of the ingredients, tasting and adjusting.
