SCD Sweet Potato Pancakes

Ingredients
3 c Almond Meal2 c baked sweet potato puree12 large eggs1/2 c honey4 tsp vanilla1 tsp unrefined sea salt1 tsp baking soda2 tsp pumpkin pie spice
Directions
Mix dry ingredients well.
Add wet ingredients and mix well.

Pour by 1/8 cup onto 250 degree griddle (greased)
Cook about 5 min then flip and cook about 4 minutes on the other side.

Freeze the leftovers and heat in the toaster oven. Delicious grain free "pumpkin" pancakes!
