Quinoa and Rice - Alice's

Ingredients
2 T. Olive oil1 large onion, chopped in 3/4 in. pieces2 medium red peppers, chopped in 3/4 in. pieces3/4 t. ground cinnamon2 garlic cloves chopped1/2 t. ground cardamon2 cloves garlic chopped fine1 c. uncooked brown rice1/2 c. quinoa1 1/2 C. sweet potatoes, chopped in 3/4 in. pieces1 1/2 C. cauliflower, chopped in 3/4 in. pieces1 can diced tomatoes with the juice reservedenough additional water to make the juice and water equal 4 C.
Directions
Make this on the stove in a large pot. Heat oil on high, add the onion, peppers and seasonings. Stir fry until onion starts to brown. Add the rice and quinoa and stir fry for another 5 minutes. Add the rest of the ingredients and cook on high until bubbling. Turn down to a simmer and cook for about 30 minutes until the rice is done. Excellent made ahead so that the flavors blend.
