3 labs eggplant (about 2 large peeled and cut 1/2-in slicesSea Salt to taste3 med. shallots, finely-chopped1 medium garlic clove, minced1/2 Cup red wine vinegar1/8 cup EVOO1/4 teaspoon pepper1/2 tablespoon fresh basil, finely-chopped2 red sweet peppers, cut into halvesAdd feta cheese to taste
Preheat oven to 400.
Place the eggplant pieces in a large colander and sprinkle with sea salt evenly,
In a large roasting pan, stir together the shallots, garlic, vinegar, olive oil and pepper. Place the eggplant slices and peppers into the roasting pan and coat evenly.
Roast for about 30 minutes, turning once.
Serve on a grain roll, topped with feta cheese
