faux lasagna

Ingredients
1 cup sliced mushrroms1 cup sliced zucchini1 medium diced onion1 cup defrosted frozen spinach2 cups finely diced tomatos1 tbsp oregano1 tbsp basil1 tsp sea salt1 can olives diced, approximately1 cup cottage cheese8 ounces mozzarellaapproximately half a packet of lasagna pasta
Directions
Sautee the finely diced veggies, onions, mushrooms, zucchini, spinach(defrosted) and tomatos using the liquid from the tomatos while the lasagna pasta boils, be sure to leave it al dente. Add in the herbs and salt to the vegetables. The vegetables will still need to be strained after cooking to reduce the liquid and add in the chopped olives.
Take an 8x8 baking dish and layer the pasta, vegetables, cottage cheese, mozzarella, pasta, vegetables, cottage cheese, mozzarella, pasta, vegetables, mozzarella. Throw in the oven for 20-30 minutes uncovered. I often only put the mozzarella on the top, but you can spread it out throughout the dish.

    I added a couple of artichoke hearts and some celery to bulk up the sauce, turned out good but not great, kinda plain. Will add some chili flakes next time. - 10/1/11
