Ingredients
Directions
Broccoli, cooked, 1 cup, chopped Shoney's Ham, Diced - 2 Tablespoon (9.1 grams) Cheddar Cheese, .2 cup, diced Egg, fresh, 4 medium Salt, 1 dash Pepper, black, 1 dash Biscuit, plain or buttermilk, 6 biscuit (2-1/4" dia)
Layer biscuit on bottom. (I smushed it to make a cup shape)
Pour some egg.
Sprinkle a couple pieces of ham.
Sprinkle some cheese.
Pour some more egg.
Sprinkle thawed broccoli.
Sprinkle some cheese.
Leave a little space at the top of the cups. When the egg cooks, it expands.
Regularly check the center of each cupcake to make sure it is cooking evenly. The first check up I did was at like 10 or 12 mins. and then every few mins after that.
This recipe yields 6, but you can double it and make more. I just usually make 6 since it will last be the whole week and they wont go bad.
