Lite Green Curry Fish & Veggies (no coconut milk)

Ingredients
1 filet white fish (tilapia)green curry paste1 cup vegetable broth1 cup evaporated milkcooking oil or fat (1tbsp)1 can mixed vegetables1/4 cup lima beans1/2 cup italian green beansbrown sugar
Directions
In non-stick pan, melt schmaltz and green curry paste together, over medium heat, stirring constantly with wooden spoon. Add canned vegetables and stir to coat. Add frozen vegetables and 1/2 vegetable stock and cook 2 minutes. Add milk and brown sugar, and return to boiling point. Add fish on top and cover -- cook/steam for ten minutes or until fish is white all the way through.

Serving Size: Makes two servings.
