Twisted Macaroni and Cheese

12 oz package of Heartland Hidden Vegetable Twisted Elbows6 Tbsp Country Crock Margarine6 Tbsp All-purpose flour1/2 tsp salt1 tsp pepper2 3/4 cups skim milk (with 1 c. divided)8 oz (one block) 2% reduced-fat sharp cheddar cheese shredded or diced (shredded is ideal, but I have diced it to save time)
Boil 4 quarts of water
Add pasta
Wait for reboil then cook for 7 minutes or desired tenderness
Remove from heat and drain
While pasta is draining, add margarine to hot pan on low. Add flour, salt, and pepper. Cook for 1-3 minutes whisking out any lumps until smooth and thickening.
Add remaining milk and cook for 7 minutes or until slightly thick and bubbly.
Add cheese and stir until cheese melts.
Add cooked pasta back in. Stir to blend.
Serve.
Serving Size: Makes approximately 6 1 cup servings
