Spicy Rice

Ingredients
2 c long grain rice4 tbs ghee or oil9 oz can cashew2 tsp cumin seeds1 hot chili, cut up1 tbs powdered ginger3.5 c water1 package frozen peas2 tsp turmeric1tsp garam masala1/2 c chopped dates1 tsp salt3 tbs Italian seasoning
Directions
Heat the ghee or oil, and toss in cumin, chili and ginger. fry until cumin turns brown, then add rice and stirfry for a few minutes. pour in water, turmeric, garam masala, dates, salt and Italian seasoning. Turn up the heat to high til a full boil, then cover and simmer on low. After about half the liquid is absorbed, quickly open lid and toss in frozen peas. cook til ALL liquid is absorbed. then turn off heat, let sit for 5 minutes. Just before serving, add the can of cashews and stir.
