Apple Puff Pancake

2 Tbsp Butter, melted3 eggs1/2 cup whole wheat flour1/2 cup soymilk1/4 tsp salt____3 large cooking apples, cored and thinly sliced3/4 cup water1/3 cup raisins2 Tbsp Sugar1/4 tsp cinnammon2 Tbsp Cornstarch
Heat oven to 400. Place small amount of butter in an oven safe pan. Place pan in oven until butter is melted.
Beat eggs. Add soymilk, salt and mix well. Slowly add 1/2 flour mix well. Add Butter. Add remaining flour, mix until smooth. Place in oven 25 min or until golden brown.
SAUCE
Place apples, water, raisins, sugar and cinnammon in sauce pot. Simmer covered until apples are tender. Mix 2 Tbsp cornstarch and 2 Tbsp of water. Add to apple mixture. Stir until thickened. Remove from heat.
Place sauce on puff pancake, slice and serve.
