Brown Sugar Sweet Potatoes!

Ingredients
- 3 Sweet Potatoes, medium- 1/4 Cup Smart Balance Light- 1 TBSP. Brown Sugar, unpacked- 1 tsp. thyme, dried- A dash of salt
Directions
- Preheat oven to 400 degrees.

- Peel and dice sweet potatoes. Set aside.

- Melt butter in a large stock pot, and whisk it into a froth. Add thyme, and whisk a little more.

- Turn off heat, throw in potatoes, and stir/toss so all of it is covered in the buttery-thyme mixture.

- Reduce heat to medium, and let the potatoes sit and soften for about 5 minutes, stirring occasionally.

- Spray a baking pan with cooking spray, and pour in potatoes.

- Bake at 400 degrees for 45 minutes, stirring halfway through to ensure evening cooking.

- Enjoy!
