La-La's Chicken and Bok-Choy

Ingredients
2 Tbl extra virgin olive oil1-1/2 pounds chicken (I use half breast, half thighs), cubed1 large onion, chopped2 cloves garlic, chopped2 Tbl season salt (or to taste)2 chicken boullion cubes2 Tbl soy sauce2 bunches fresh bok choy (about 3 cups chopped)1 bunch fresh spinach (about 3-4 cups chopped)1 red ripe tomato, diced
Directions
Serving Size: Makes 4-5 1 cup servings

1. Wash and chop spinach and bok choy, separating white and green sections of bok choy.

2. Heat olive oil over medium heat. Add onions and garlic and sauté until onions are soft and translucent.

3. Add cubed chicken pieces, sprinkling with season salt. Continue to sauté until chicken begins to turn white, about 5 minutes.

4. Add white pieces of bok choy and cook until white pieces become soft. Add green of bok choy, spinach, tomatoes, boullion cubes, and soy sauce. Simmer uncovered for 20-30 minutes until tomatoes are soft and most of the liquid has cooked out.

5. Serve over rice and enjoy :)
