Chia Balls

Ingredients
2 tb almond butter1/2 c chia seeds6-8 dates1/2 cup coconut, divided1 tsp vanilla
Directions
1. Put the dates, vanilla and almond butter in a blender and blend until smooth. Dates differ in their level of moisture, you may have to add a little water.
2. Add the chia seeds and 1/4 cup of coconut and mix until blended. Dough should be thick and sticky.
3. Use a cookie scoop or tablespoon to portion out 10 servings.
4. Roll each portion into a ball and roll in the remaining coconut.
5. Freeze until firm, usually overnight.
