Crunchy Cucumber Salad

Ingredients
Juice and zest of 2 limes 1/4 teaspoon cracked black pepper1 tablespoon olive oil2 English cucumbers, diced (and peeled if you prefer)1/2 red onion, diced fine (about 1/2 cup)2 stalks celery, diced (about 1 cup)1/4 cup chopped cilantro1 jalapeno, seeds removed and minced
Directions
Whisk together the lime zest and juice, pepper, and olive oil in a large mixing bowl. Add the remaining ingredients, and toss to combine. Serve chilled.

    I goofed a bit--forgot to whisk the oil and lime juice together--and it was still very good. I will try it again--and will cut the cucumbers up smaller. I did leave out the jalapeno--didn't have any in the house. Will include next time! - 7/10/13

    Loved this. I did have to go and look up what the heck 'Cilantro' was first though. I have Coriander growing in my garden so there was no problem there. I used less lime though. I think this refreshing salad is going to be had a lot this summer (if it ever arrives) - 6/26/15

    Authentic_me - many folk know from the ingredients that they will not enjoy the recipe. But with some different ingredients, they may really enjoy it.
    Chillies or any hot peppers - I can't do. But I'll try it with different ingredients. I know this already.

    Added a sprinkle of himalayan sea salt. Added a spritz of garlic powder. Diced up a beefsteak tomato. Subbed white pepper for the cracked black pepper. A little more zing. Did not use jalapeno. - 3/22/21
