Yummy Low Cal Veggie Soup

Ingredients
1.5 C chopped carrots1.5 C chopped cabbage1.5 C onion2 minced garlic cloves3 meduim shallots - chopped fine1 can pinto beans1 can diced tomatoesV8 Juice (I like the hot and spicy)8 cups chicken broth1/2 T olive oilcooking spray
Directions
Spray stock pot w/ cooking spray and sautee onion, garlic and shallots in olive oil until translucent Add carrots and cabbage and sautee for about 6 min. over medium heat. Add rest of ingredients and simmer, uncovered for at least 45 min.
