1 or 2 cans water packed tuna, drained1 or 2 tbs mayonnaise1/4 to 1/2 cups shredded carrots1/4 to 1/2 cups celery, sliced very thinly1/2 to 1 cup baby spinach1 to 2 slices whole wheat toastpepper to tasteoptional ingredients: diced apples, sliced avocadoes, substitutions: italian dressing or oriental dressing
Directions
serve on a slice of whole wheat toast or a bed of lettuce. as a side dish, serve with pineapple tidbits, dried cranberries and almond slivers or sunflower seeds
