Soy/Oatmeal Applesauce Raisin Cookies

Ingredients
1 cup shortening1/2 cup brown sugar1/2 cup granulated white sugar2 eggs1 and 1/3 cups white flour2/3 cup soy flour1/2 tsp. salt1/2 tsp. nutmeg1/2 tsp. cloves1 tsp. cinnamon1 tsp. baking soda1 cup applesauce1 cup raisins2 cups dry oatmeal1/2 cup broken walnuts or pecans(optional)
Directions
Place 1 tablespoon of dough for each cookie on greased cookie sheet. Place cookie sheet in 350 degree F oven for 10 to 12 minutes. Cool on flat surface. Cookies are very moist and will stick together if stacked on top of one another.
