Crispy Pizza Quesadilla

2 6-inch white corn tortillas1 Tbs pizza sauce2 Tbs monterey jack cheese, shredded3 turkey pepperoni slices1/4 cup red bell pepper, dicedseasonings to taste (oregano, red pepper flakes, garlic, minced onion)
-Put a dab of olive oil (about 1 tsp) in nonstick pan. Place one tortilla in pan on top of oil.
-Add pizza sauce, cheese, pepperoni slices, and bell pepper. Sprinkle seasonings. Top with second tortilla.
-Turn pan to medium and let cook for 3-5 minutes, until cheese is starting to melt and bottom tortilla becomes crispy.
-Carefully flip the quesadilla and cook additional 3-5 minutes, until desired crispiness.
-Remove from pan and cut into quarters.
Serving Size: makes 1 serving
