LEMON COOKIE

Ingredients
1. 4 large eggs2. 2 8 oz. containers of Cool Whip Light3. 2 boxes of any Lemon cake mix extra moist4. 1 lb. of powdered sugar5. parchment paper6. baking sheets (2)7. cooking spray8. melon or meat baller scoop with flip handle
Directions
After mixing batter, use a melon or meatballer sprayed with cooking spray dip into batter and place in a small bowl with powdered sugar. Roll batter into a ball by spinning ball in powdered sugar until all the ball is coated. Place each cookie ball on parchment paper spaced 4 inches apart. Bake for 10 - 12 minutes in a preheated 350 degrees.

Serving Size: This is a double batch recipe for cake like lemon cookies. It makes 36 - 40 cookies.
