Deb's Guiltless Cornbread - diary-free, gluten-free, sugar-free, whole grain

Ingredients
1/2 cup mashed ripe avacado1/4 cup + 2tbsp stevia granuales2 eggs2 tbsp vinegar plus enough unsweetened original almond milk to make a full cup1/2 tsp baking soda1 cup cornmeal1/2 cup millet flour1/8 cup milled flax seed3/8 cup oatflour1/2 tsp salt
Directions
Preheat oven to 375°. Mix almond milk with vinegar & set aside. Cream avacado w sugar, add eggs, buttermilk, & baking soda. Add flours & salt. Mix until combined. Pour into greased pan/baking dish (I use a 9-in circle cake pan) and bake 30-40min until inserted toothpick comes out clean. Allow to cool appx 10min before cutting into 12 servings.
