Latatha (Grilled Veggies)

Ingredients
1 onion2 potatoes2 zucchini2 red peppers1 tbsp garlic powder1/4 cup of extra virgin olive oil1 tsp salt
Directions
Cut onions, potatoes (skinned) into quarters, cut red peppers into slices and zucchini into long quarters. Place on a baking dish drizzle olive oil, garlic powder and salt over veggies. Stir with a spoon and bake in oven at 350 degrees for 40 minutes. Stir every 20 minutes and dish is complete when potatoes begin to get browned.
